10 breakfast ideas that are super easy to make

Sunday mornings are made for chilled out breakfasts so here are my top 10 breakfast ideas. As a mom to growing children, I get tired of serving the same cereal during the week. These recipes are super tasty and easy to make with little fuss. In fact, they will help you get rid of all that food leftover in the refrigerator.
I use Sunday morning as a way to feed my family fun, tasty food.  It’s even better when the rest of the family comes round and we all have brunch together. My 10 breakfast ideas are guaranteed to suit all tastes and budgets.

1. Quiche Toast Cups

What a great way to use up bread and eggs. You simply cut the slice of bread into a circle using a cookie cutter. Press into a pre-greased muffin tin and fill with whatever is in the fridge, I love ham, cheese, bacon, spring onion, mushroom, tomato the list goes on. These are a great way to use up leftovers from the fridge. I have even been known to throw in a little strawberry, sweetener and make it a sweet toast cup!

2. Breakfast Pizza

Because everyone loves pizza, why not make it for breakfast!? Just replace the flour crust with hash browns, and then top it with your favourite breakfast ingredients (eggs, bacon, sausage, ham, peppers, cheese, etc.). Make your own hash brown base by grating leftover boiled potatoes and lining a skillet with them. Add toppings and grill until cooked through. Cheap as chips! Or well potatoes 🙂

 

 

3. Pancakes

There are so many pancake options that I could literally give you 10 breakfast ideas for pancakes. Not to mention that you can have them sweet or savoury.

 

Then I found this recipe – it is foolproof even for me!

 

Ingredients

1lb soda bread flour or self-raising flour
6oz castor sugar
3 eggs (whisked until frothy)
1 carton buttermilk

Method

Preheat griddle
Combine flour and sugar. Add eggs and stir well. Add buttermilk slowly while stirring. Make sure the mixture is smooth. Make pancakes by pouring mixture onto the griddle. Leave until bubbles come through and then flip. Serve.
This batter can be used to create amazing waffles and even bacon pancake dippers.
You can also dip apple slices in the pancake batter and griddle for a tasty snack.

4. Bacon Pancake Dippers

This may sound strange to you, but these bacon pancake dippers are the BEST! I like that you can just pick them up and dip them. They are so divine when smothered in maple syrup. Simply pour a strip of pancake batter and add a slice of cooked bacon to the top. Cook on both sides and serve.

5. Egg rolls

Beat up some eggs. Add a thin layer to a pan and fry on both sides for a few minutes. This creates an egg roll – kinda like a tortilla wrap only made from an egg!

You can then fill with lots of different things such as bacon, ham, cheese. You can even add a little sweetener or sugar to the egg before making the wrap and fill with custard, cream and fresh fruits! So delicious!

 

These can also make excellent lunch box ideas as they taste great cold.

 

6. Crockpot french toast

Another great breakfast idea perfect for colder mornings. You can make ahead the night before too and serve in the morning. Dice up bread – I like to use sweet bread such as brioche or croissant. You then make up a mixture of eggs, milk, cinnamon and sugar. You can throw in some raisins, bananas and blueberries too if you like. Pour the mixture over the bread and cook on low for a few hours until cooked through.

 

7. Breakfast tray bake

In a deep sided baking tray add some hash browns, sausages, mushrooms, tomatoes, eggs, beans and cook in the oven. This is basically throw everything on a tray and oven bake for 30 minutes. You can mix it up by adding asparagus, baby potatoes for more of a brunch feel.

 

8. Smoothie Bowls

Combine frozen banana, frozen strawberries, and any other fresh or frozen fruit you have in a blender. Add some coconut milk. You can also add protein powder if you wish. Puree until completely smooth. Make sure the mixture is thick.

 

Transfer to a bowl and top with seeds, nuts, fruit slices, desiccated coconut and whatever else you like. Enjoy!

9. Baked Oatmeal

  • 3 1/2 cups old-fashioned rolled oats
  • 1/3 cup light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup olive oil
  • 3 eggs
  • 1 1/2 cups milk
  • 1 cup raisins optional

Grease a 10-inch pan with butter or coat with cooking spray. Combine the oats, brown sugar, baking powder, salt, and cinnamon in a large mixing bowl. Stir to combine. Add the oil, eggs, and milk and stir to combine. Add the raisins and stir once more.

Scoop the oat mixture into the greased pan and bake for 30 minutes. The oatmeal should be lightly browned, slightly crisp on top and around the edges.

Remove from the oven and let cool for 10 minutes before serving.

You can add peanut butter, Biscoff or chocolate chips to this recipe to jazz it up. You can also freeze this in advance. It is perfect to serve in slices as a tasty snack for the children.

 

 

Finally

10. One-Wok Red Onion and Bread Stir-Fry

Ingredients

Serves: 2

  • 3 tablespoons sunflower oil
  • 1 tablespoon salted butter
  • medium red onion (sliced)
  • 1 small chilli (deseeded and chopped finely) – you can leave it out if you don’t want to add it
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground black pepper
  • 5 slices bread (cut into 2cm cubes)
  • 3 large eggs (whisked lightly)
  • 3 tablespoons chopped fresh coriander

Method

Heat a wok over medium heat. Put the oil and butter into the hot wok.

Add the onions and chilli, lower the heat and cook gently for about 10 minutes, until softened. Season with salt and pepper.

Now add the cubes of bread, and toss through the onions to mix well. The bread will become lightly toasted.

Pour the eggs all over the bread. Give everything a brief stir, then cover with a lid and leave over a low heat for 2 minutes. This will allow the egg to cook through.

Take off the lid and stir the mixture to break it up.

Take off the heat, sprinkle over the coriander and serve.
