BRAIN BOOSTING RECIPES
As part of the series on Mental Health, I wanted to include a couple of recipes to include brain-boosting foods which will have a positive effect on your mental health.
- Garlic clove
- 85g blueberries
- 1 tbsp extra virgin rapeseed oil
- 2 tsp balsamic vinegar
- 125g fresh or frozen baby broad beans
- 1 large cooked beetroot, finely chopped
- 1 avocado, stoned, peeled and sliced
- 85g bag mixed baby leaf salad
- 175g cooked chicken
Finely chop the garlic. Mash half the blueberries with the oil, vinegar and some black pepper in a large salad bowl.
Boil the broad beans for 5 mins until just tender. Drain, leaving them unskinned.
Stir the garlic into the dressing, then pile in the warm beans and remaining blueberries with the beetroot, avocado, salad and chicken.
Toss to mix, but don’t go overboard or the juice from the beetroot will turn everything pink. Pile onto plates or into shallow bowls to serve.

This is a recipe from the Jamie Oliver website. You can mix it up by adding your own variations such as replacing the salmon with chicken and adjusting the cooking times. I like to make these ahead and finish on the BBQ for that extra summery vibe. Also perfect for preparing head when having a dinner party as they are super easy to make and taste like you have been slaving for hours!
- 50 g unsalted butter
- 2 medium leeks
- 4 salmon fillets , skin off
- 8 tablespoons dry vermouth , or dry white wine
- 4 tablespoons organic chicken stock
- 1 tablespoon baby capers
- a few sprigs of fresh dill
- Preheat the oven to 200ºC/400ºF/gas 6.
- Melt the butter in a non-stick frying pan over medium heat. Cut out four 40cm squares of greaseproof paper and brush with a little melted butter. Trim the leeks, then julienne or cut into matchsticks and sauté in the butter for 6 to 8 minutes, or until lightly golden. Season well.
- Divide half of the leeks between the paper. Place a salmon fillet on each, season, and spoon over 2 tablespoons of vermouth, 1 tablespoon of stock and the remaining leeks. Scatter over the capers. Finely chop and scatter over the dill. Fold up the sides of the paper and scrunch up to make secure parcels.
- Place the parcels on a baking sheet and cook for 15 minutes, or until the salmon is cooked. Open the parcels at the table.

Finally brain boosting desserts. Ingredients such as blueberries, oranges, nuts and dark chocolate make perfect desserts. There are many combinations of dessert available and any are quick and easy to make and prepare ahead. I have included my two favourites here.
